Paper Bag Albums
Paper bag albums are definitely one of my absolute favorite types of mini scrapbooks to make! I think it has everything to do with all the pockets and pullouts you can incorporate into them.
The typical paper bag scrapbook is made with lunch bags, but for more mini scrapbook fun you could try making one with the follow types of bags:
Ice cream bags, flat gift bags, gift bags with handles, Chinese take out bags, larger "Keep it Cold" bags from the grocery stores (Wal Mart has them on the end of the freezer aisles), large grocery bags (with or without handles).

As you can see, there is no limit to themes you can come up with for paper bag mini scrapbooks.
I have also made birthday cards from paper bags. I just use one bag instead of three. These are a big hit. Again, you could make cards out of any of the above themes, as well as any holiday of your choice. I'm thinking of making this year's Christmas cards out of paper bags. Oh, too much fun!
